&lt;p&gt;General Tsao’s Chicken (serves 4, from Weight Watchers)&lt;/p&gt;
&lt;p&gt;3/4 cup canned chicken broth (reduced sodium)&lt;/p&gt;
&lt;p&gt;1 1/2 Tbl cornstarch&lt;/p&gt;
&lt;p&gt;2 Tbl sugar&lt;/p&gt;
&lt;p&gt;2 Tbl low-sodium soy sauce&lt;/p&gt;
&lt;p&gt;1 Tbl white wine vinegar&lt;/p&gt;
&lt;p&gt;1/2 tsp ground ginger&lt;/p&gt;
&lt;p&gt;2 tsp peanut oil&lt;/p&gt;
&lt;p&gt;2 medium scallions chopped (or one small onion)&lt;/p&gt;
&lt;p&gt;2 medium garlic cloves minced&lt;/p&gt;
&lt;p&gt;1/2 tsp red pepper flakes (optional)&lt;/p&gt;
&lt;p&gt;1 Lb uncooked chicken breast cut into 2” pieces&lt;/p&gt;
&lt;p&gt;2 cups brown rice kept hot&lt;/p&gt;
&lt;p&gt;- In a medium bowl whisk together cornstarch, sugar, soy sauce, vinegar and ginger, set aside&lt;/p&gt;
&lt;p&gt;- Heat oil in a wok or large skillet over med-hight heat, add scallions, garlic, pepper and cook 2 min.  Add chicken and cook till brown all over (5 min)&lt;/p&gt;
&lt;p&gt;- Add reserved sauce and simmer until sauce thickens and chicken is cooked trough (3 min)&lt;/p&gt;
&lt;p&gt;- Serve chicken and sauce over rice. &lt;p&gt;Crappy things happen, like breaking your foot 3 weeks before the 1/2 marathon you trained for.  But never give up.  There are always opportunities to exercise and keep on track.  That is what I have done and am still doing. That I used to be a woman&amp;#8217;s size 28-30 and lost a massive amount of weight to fit into a size 12.  I know I am not a size 8 but there is no doubt in my mind that I will be, hence 28 to 8.  I created this blog to let people know what worked for me and how it can work for you. I wanted to create a blog to educate others to what I have learned. &lt;/p&gt;
&lt;p&gt;I currently have lost 170 pounds and have simply done it with changing my diet and exercising.  Ok the word &amp;#8216;simple&amp;#8217; is an understatement, I worked my butt off.  I use &amp;#8216;simple&amp;#8217; in terms that I did not count calories, have surgery or follow a strict diet. I will warn you that I am more of an in-your-face kind of person.  I am not here to gently push you into the cushy, feathery land of losing weight.
